Ingredientes para 4 personas
- 4 puerros.
- 2 patatas.
- 1 cebolla.
- 1 taza de leche vegetal (de soja por ejemplo) o alternativa de nata vegetal.
- 1 cucharada de margarina vegetal (o aceite vegetal suave).
- Sal y pimienta.
Preparación
- Picamos la cebolla y la picamos.
- Pelamos, lavamos y cortamos la patata en cuadraditos.
- Dejamos también límpios y cortados los puerros (sólo usaremos la parte blanca).
- Ponemos la margarina (o el aceite) en una olla y a fuego medio sofreímos la cebolla unos minutos hasta que tome un tono transparente.
- Añadimos entonces los cuadraditos de patata y los puerros, los sofreímos junto con la cebolla durante unos 4 minutos, removiendo con la cuchara de madera.
- Ponemos agua en la olla hasta cubrir. Dejamos que se cocine todo junto durante unos 15 minutos.
- Salpimentamos. Añadimos entonces la taza de leche de soja (u otra leche vegetal) y trituramos todo con la ayuda de la batidora. En este punto podemos pasar nuestra crema “vichisua” por un chino, para que quede una textura más homogénea y suave.
- Dejamos que se enfríe bien en la nevera antes de servir.
