Ingredientes para 10 personas
- 2 berenjenas moradas de tamaño medio.
- ¼ de cebolla troceada.
- 2 a 4 dientes de ajo finamente troceados.
- 1 tomate grande pelado y despepitado.
- 8 cucharadas soperas de aceite de oliva virgen extra.
- 2 cucharadas soperas de zumo de limón.
- 1½ cucharadita “de café” de sal o al gusto.
- ½ cucharadita “de café” de mejorana.
Preparación
- Encienda el horno en modo” grill”.
- Corte las berenjenas a lo alto y en rodajas gordas.
- Haga rajas en cada una de las rodajas y écheles sal.
- Deje que las berenjenas se sequen sobre papel de cocina durante 30 minutos.
- Una vez secas ponga las berenjenas en una fuente antiadherente o engrasada y métalas al horno durante 10 minutos, dé la vuelta a las berenjenas y déjelas cocinar durante otros 5 o 10 minutos o hasta que las berenjenas estén tiernas.
- Saque las berenjenas del horno y déjelas enfriar.
- Una vez frías corte finamente las berenjenas, la cebolla, el ajo y el tomate. Ponga estos ingredientes en un cuenco y mientras bate los ingredientes añada el aceite de oliva, después el zumo de limón, la sal y la mejorana.
- Métalo en la nevera hasta que lo vaya a servir. Sírvalo con galletas saladas, pan de pita o chips de maíz.
